Andy - for the ones that I ate, they were fresh ears (not dried like these). You marinate them, and then fry them in hot oil, as you might with pork skins. do you remember the fried pork in Mexico. It is what they taste like, but a bit thicker. They are becoming more popular in pork restaurants here in the USA. - R
